Tarragon crepes

Ingredients
  • 6 tbsp de Sunflower oil Gustadina
  • 1 cup de Chopped Garlic
  • 1 unit de Onion sliced
  • 400 grams de Hearts of Palm
  • 2 tbsp de Milk cream
  • 1/2 cup de Chopped Tarragon
  • 1/2 cup de Wheat flour
  • 9 units de Egg (6 yolks and 3 whole)
  • 3/4 cup de Milk
  • 6 tbsp de Melted Butter
  • 1 pinch de Nutmeg
  • 1 pinch de Black pepper
  • 1/2 cup de Mozzarella chesse
  • 2 tbsp de Rum
  • 1 pinch de Salt
Preparation
Crepe
  1. Blend all ingredients except butter.
  2. While still liquefying, add the melted butter little by little.
  3. Fry the mixture in a pan with little oil.
Filling
  1. Fry the leek and garlic in a pan.
  2. Add chopped palm hearts and tarragon.
White sauce
  1. Cook the flour in butter, without browning it.
  2. Add cold milk and stir constantly.
  3. Add the cream, the grated cheese, nutmeg, salt and pepper.
  4. Mix the filling with the white sauce. Fill the crepes with the mixture.
